An Exceptional Mediterranean Terroir :
Our vines thrive on unique marine soils, shaped by centuries of monastic history. The interaction between the limestone rock, the Mediterranean climate and the sea breeze creates an extraordinary microclimate. Frost is non-existent, heat is temperate, sunshine is generous and humidity is moderate in winter and high in summer. Ideal conditions for excellent grapes.
Opposite you, a parcel of Syrah. Note the very stony soil of Jurassic dolomitic limestone. Although the terroir is predominantly clay-limestone, it varies from plot to plot. The monks have therefore carefully selected the grape varieties that are best suited to these terroirs. The white varieties are planted on deep clay in the centre of the island for greater freshness, while the Syrah can withstand a more draining soil, favouring a concentrated tannic structure.
